Preparation time
15 to 30 minutes
Ingredients
2 tablespoons oil
500 g lean beef mince
1 onion, chopped finely
10 button mushrooms, sliced
½ cup tomato paste
1 cup beef stock
300 mL of light sour cream
Method
1. Heat oil in a pan.
2. Cook onions and mushrooms.
3. Add mince, stir and break up until browned.
4. Add stock and tomato paste and simmer until the sauce thickens.
5. Stir through sour cream.
Recipe notes
Serve with cooked pasta spirals, mashed potato, tender rice or crispy potato wedges (our favourite!)
You can also chop the mushrooms finely if you're wanting to hide them. My children can be quite
fussy so I was really pleased when they ate the beef. You may wish to thicken the sauce with some
cornflour. I've found that we like it this way but if you've been heavy handed with the water or
stock, it's a great way to bring back the full bodied texture.
